Sunday Special: Picky Eater Approved Brownies


It’s not my birthday anymore, but I’m still pretending it is because I have to end my birthday week by sharing my favorite birthday dessert. Growing up, I didn’t like cake. I wouldn’t eat it at friend’s birthday parties and I definitely wouldn’t serve it at my own. Instead, chocolate chip cookie cake, ice cream cake, cup cakes (because they taste so much different from a regular cake) or brownies filled the spot of Birthday Cake.

Brownies were – and still are – among my favorite desserts. The fudge, gooey, bar of chocolate deliciousness is incredible, especially when it’s served with ice cream. What’s even better is that I don’t have to worry about Mitch eating it all before I have my fair share. The perks of having a boyfriend who doesn’t like chocolate…

I used to make brownies out of the box because it was quick, easy and delicious. I realized homemade brownies are even more delicious when my friend Rosy made them during my semester abroad in Sydney. Now I won’t make brownies any other way.

Picky Eater Approved Brownies:

10 oz dark chocolate chips

8 oz butter

1/3 cup cocoa powder

1 1/2 cups sugar

3 eggs

1/4 cup self rising flour

1/2 cup all-purpose flour

10 oz milk chocolate chips

Preheat oven to 350F. Combine dark chocolate chips and butter in pan over simmering water or use microwave to melt. Stir until smooth and completely combined. Cool for about 5 minutes. Mix cocoa and sugar into warm chocolate mixture. Add one egg at a time. Sift in flours and gently stir in milk chocolate chips.

Spread batter in greased pan and bake for 35 minutes. Allow to cool completely in pan and dust with powdered sugar (or cocoa for those chocolate lovers out there).
